Sebastian’s Bistro is the sleeper dinner at Disney’s Caribbean Beach Resort: a relaxed, waterfront table-service spot with Caribbean and Latin-leaning flavors, Sebastian touches, and none of the “special occasion restaurant” stiffness. The room feels bright and beach-house casual, which is exactly right after a long park day or a Skyliner hop from EPCOT or Hollywood Studios.

The draw here is the family-style meal. You are not coming for tiny composed plates; you are coming hungry for pull-apart rolls, bright sauces, seafood, chicken, pork, rice, vegetables, and a dessert finish that usually lands better than it has any right to. It is one of the better resort-dinner values at Walt Disney World because the food has personality and the format lets your table settle in instead of negotiating entrees.

The catch: picky eaters may not love the Caribbean flavor profile, and it is not worth a huge transportation detour unless you are already at Caribbean Beach, Riviera, Pop Century, Art of Animation, EPCOT, or Hollywood Studios. But if you are on the Skyliner line, this is absolutely one of the smartest dinners people forget to book.
